Bells & Whistles PR has been working alongside chef patron Steve Drake to announce the eagerly anticipated launch of his new modern fine dining restaurant in Surrey, Sorrel, on October 11th, 2017. To mark Steve’s first new opening in 11 years, The Caterer put him on the front cover of the magazine.

Delighted to be back in the kitchen, Steve is excited to share his creative process with guests, he says: “My vision for SORREL has always been to create a connection between what’s happening in the kitchen and the dining room. With the new open plan design, as soon as you walk through the door you catch a glimpse of the pass and the chefs at work giving you an instant hit of energy and creativity.

“Having spent the last year refining and simplifying my cooking, I want to ensure every element of the dish shines.  A new dish of 21-day aged raw venison with bitter orange, smoked egg yolk, anchovy and dried watercress is full of flavour and texture. This light, clean style can be seen throughout the seasonal menu.”

Steve Drake has worked in some of Europe’s best kitchens: Chez Nico at Ninety Park Lane; the Oak Room with Marco Pierre White; Pied a Terre; Aubergine, as well as short stints at L’Arpège in Paris and L’Auberge de l’Eridan, Annecy.

He first rose to prominence when he won the Roux Scholarship – widely considered the most prestigious, and technically challenging, competition in the UK – and continues to be closely involved with the Roux family and his fellow scholars to promote their aim of inspiring and enabling a new generation of British chefs. Steve gained his first Michelin star at Drake’s on the Pond in Abinger Hammer.

He then opened Drake’s in Ripley, where he held a star for a further 14 years.  Regularly featured in national and local press, he has consistently appeared in the UK’s leading ‘Top 100’ lists including The Sunday Times, Restaurant Magazine and Square Meal. In 2013, Steve purchased The Anchor pub, also in Ripley, and his team has created a relaxed atmosphere where people enjoy a simplified version of his food, as well, of course, as a great pint. Steve’s third solo opening, SORREL, opens in October 2017. For more info: Visit: Follow Steve and his team on Instagram @sorrel_restaurant_dorking
